How to use leftover pancake or waffle batter to make a funnel cake

About a week after From Garbage to Gourmet: the eBook was released, my cousin bought it and then posted this on my Facebook wall:

I am enjoying your book! Made the very berry pancake sauce stuff tonight to go over funnel cakes made from left over waffle batter. Strawberries and batter were soon to end up in the trash probably. Thanks for the inspiration!

Now if that isn’t From Garbage to Gourmet genius, I don’t know what is! I had to try it myself – in fact, I had some frying oil that I was hoping to use up soon – so I actually whipped up a small batch of pancake batter to test it out.

It was delicious – and it would be even more so with the Very Berry Pancake Sauce on page 20 of the book, like my cousin suggested. Here’s how to make your own gourmet funnel cakes with leftover pancake or waffle batter.

Leftover Pancake Batter Funnel Cakes

You can use waffle batter in this recipe, too.

How to use leftover pancake or waffle batter to make a funnel cake

Leftover pancake or waffle batter
Vegetable oil, for frying
Powdered sugar, for dusting
Very Berry Pancake Sauce (page 20 of From Garbage to Gourmet), optional

If you like really crispy, small strings of funnel cake, squeeze the batter and move it around quickly. For larger pieces of funnel cake, squeeze the batter and move it around more slowly.

Don’t have any leftover pancake or waffle batter?

If you don’t have any leftover batter but just can’t wait to make funnel cakes, here’s a batch of batter that will make about two large funnel cakes.

1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons sugar
2 tablespoons butter
1 cup buttermilk
1 egg
1 teaspoon vanilla

Whisk the flour, baking powder, baking soda, salt, and sugar together in a small bowl and set aside. Melt butter in a small saucepan, then whisk in milk and egg and remove from heat. Add vanilla; then gently fold into dry mixture. Use as directed above.
